What is Mei Fun?

Mei fun (sometimes called mi fung), or rice noodles, is a common and very popular snack in the southern regions of China.

Mei fun is made by soaking, cooking and then pressing the raw rice and then processing this product into strips.

It is soft and flexible, yet holds together when dry fried. Cooked this way it is used in a variety of dishes or added to soup, having a smooth taste, and is a great favorite of the people of southern China.

Recipe for Fried Chow Mei(Mai ) Fun

Chow Mei Fun is my family's favorite breakfast. We often eat a dish of Chow Mein Fun along with a bowl of porridge or mix it with a little milk which is delicious.

However, the way we like it best is with some vegetables, meat, cooked egg, and chow rice noodles, making it a nutritionally balanced meal.

I usually use whatever vegetables I have on hand in the refrigerator, such as carrots, which are an important ingredient.

Once the dish is fried, it is so delicious that even children who do not like carrots will eat them without noticing!

Here is my family's recipe for Chow Mei Fun:

Ingredients mei fun
Ingredients:

  • 500g rice noodles
  • 30g carrot strips
  • 30g onion, sliced length ways
  • 1 egg (fried egg strips)
  • 50g beans, sliced
  • 1 sausage, cut into strips
  • 8 teaspoons Peanut oil (one teaspoon for boiling water, two teaspoons for stopping noodles sticking, five teaspoons for cooking)
  • salt to taste
  • 2 teaspoons light soy sauce
  • 1 teaspoon dark soy sauce

How to chow mei fun

Step 1

Bring water to the boil and add 1 teaspoon oil and 1 teaspoon salt.

Blanche the sliced beans for a minute or so.

Step 2

Remove the beans and immediately place in chilled water, drain and put aside.

Step 3

Boil water and cook the rice noodles.

Step 4

Remove the noodles and place in chilled water, drain and mix in a small amount (two teaspoons) of the oil to stop the noodles sticking together.

Step 5

Add oil to the wok and stir-fry the sausage strips on low heat.

Step 6

Remove the sausage strips and put aside.

Step 7

To the hot wok, add the carrot strips, sprinkling with a little water and stir to soften.

Step 8

Add onion and a little salt, and continue to stir-fry until the onion is soft. Remove from the wok and put aside.

Step 9

Add more oil to the wok and stir to cover the sides, pouring out excess oil(Only keep a little oil in the wok).

On low heat, stir fry the rice noodles using two chopsticks, making it easier to separate them so that they cook evenly.

Step 10

Add egg strips, and return carrot, onion, and sausage to the wok and stir-fry evenly.

Step 11

Add a dash of soy sauce to taste and to add color.

Step 12

Lastly, add the beans and stir-fry evenly.

The Benefits and Uses of Rice Flour

Rice noodles are good for the stomach, Blood, ear health, eyesight, spleen.
Blood: rice noodles are high in iron with good absorption, and promotes hematopoietic function.

How to Select the Best Rice Noodles

Check the Brand

The best rice noodles are produced by larger-scale companies that offer a guaranteed brand, high product quality, and service quality. These companies have more advanced scientific and technical product formula design and strict quality control of raw materials.

Their production equipment is superior and has a high level of enterprise management, all ensuring a high-quality product.

Read the Label

Check to see if the label on the package is complete. According to the national standard, the packaging label must include the name and address of the factory, production date,  shelf life, the implementation of standards, trademarks, net content, ingredients table, nutritional ingredients, and food preparation methods, and other items. If any of this information is missing, it is recommended that you do not buy that product as the product may be defective.

Check Nutrition and Ingredients

Check that the nutrient composition table is complete. It should state the nutritional amounts of calories, protein, fat, carbohydrates, and other basic nutrients, as well as vitamins such as vitamin A, vitamin D, some of the B vitamins, trace elements such as calcium, iron, zinc, phosphorus, and any other added nutrition substances.

Read the Dietary Instructions and Precautions

Check the product instructions. The national standard requires that it state clearly "Breastmilk is the best food for babies."

It should also state that the product is suitable for babies 6 months of age and older whether breastfed or not, and that consumption of this product by babies 6 months or more should be accompanied by the addition of supplementary food.

Weaning formula rice flour should also indicate "weaning formula food" or "weaning supplement food". These consumer statements are required on the packaging.

Look for Good Color and Smell

Good quality rice noodles should be white and uniform in color, with no other smell present.

Sub-quality rice flour is slightly yellow and uneven in color and may have other odors present.

However, pregnant women, children and the elderly should eat less due to additives in the flour.
